Bake: 375 degrees Time: 10-15 minutes
Ingredients
3 cups flour
3 Tablespoons baking powder
3 Tablespoons sugar
1/2 Tablespoon kosher salt
6 ounces butter (COLD and cut into bits)
1 jalapeno pepper (seeded and diced)
2 scallions chopped
1 cup buttermilk
Directions
1. In Medium bowl, add first four ingredients and whisk together
2. Cut in the cold butter cubes till coarse crumbs
3. Add the chopped scallions and chopped jalepeno pepper
4. Stir in the buttermilk until it forms a ball, placing it on floured board
5. Mix with hands a little just to form ball, adding flour as needed
6. Roll out and cut into 15 circles, placing on baking sheet
7. Bake in a 375 degree preheated-oven for 10-15 minutes or until golden brown

Bake: 425 degrees; 350 degrees Time: 20 minutes; 30-35 minutes
Ingredients
1 cup Oat Bran organic
2 cups Wheat Bran organic
1 cup Flax Meal organic
1 1/2 cups Blackstrap Unsulphured Molasses
4 teaspoons salt
3 1/2 tablespoons yeast
5 cups water tepid
3 cups Whole Wheat organic Bread flour
7 cups Unbleached organic White flour
1 cup Rye flour organic
Directions
1. In a very large metal bowl, add water, molasses, oat & wheat brans, flax meal, 2 cups wheat bread flour, 3 cups white flour, and 1 cup rye flour and the yeast.
2. With wooden spoon, stir altogether until well blended and texture is like a pancake batter
3. Cover top with plastic wrap for 1-2 hours (Place in a draft-free area) until risen and bubbly
4. Remove plastic and add the 4 teaspoons salt, 1 cup wheat flour and 4 cups white flour until dough is able to be kneaded
5. Knead until dough is elastic, using small amounts of oil in between kneads, about 7 minutes (refer to video)
6. Let rise in bowl covered with plastic until doubled in size, about 1-2 hours
7. Remove plastic and punch down dough, cutting into 4 equal pieces, about 2 1/4 pounds each
8. Knead each one slightly and let them rest for about 10 minutes covered with a linen towel
9. Take each mound and flatten with palm of hand on both sides and fold each side inwards, turning around to do other side
10 .Pound down again shaping into small rectangle and roll from longest sides, tucking small edges in and under
11. Place seam side down in an oil sprayed bread pan and cover with linen towel until risen slightly over top edge
12. Bake in pre-heated 425 degree oven for 20 minutes and then 350 degrees for 30-35 minutes until when tapped on top, it sounds hollow
13. Cool on baking racks until cool and then refrigerated (slices easier when cold) and cut into slices and freeze bread
* Very important to add SALT in at step 4 so as not to reduce the affect of the yeast (salt has been know to kill yeast)
No Knead Cottage Cheese Bread
No-Knead Cottage Cheese Bread

Bake: 375 degrees Time: 45-60 minutes
Ingredients
2 cups organic whole wheat bread flour
1 cup organic unbleached flour
1 cup powdered milk
2 tablespoons wheat bran
2 tablespoons wheat germ
1 envelope dry yeast (2 1/4 teaspoon)
1/2 teaspoon salt
2 tablespoons raw honey
2 tablespoons oil
1 cup cottage cheese
1 cup water (warm)
Directions
1. Sift flours, salt and powdered milk together into large bowl
2. Add all other dry ingredients to the bowl mixture and whisk together
3. Make a well and add the cottage cheese, oil, honey and warm water and stir altogether
4. Let rise until double in size, about 2 hours
5. Spoon down dough and place in a loaf pan coated with a non-stick spray
6. Let rise until comes to top or just a little above top of pan, about 15 minutes
7. Bake in pre-heated 375 degree oven for 45-60 minutes or until when tapped on top it sounds hollow
8. Cool completely on rack and then slice—-freezes well

Bake: 375 degrees Time: 20 minutes
Ingredients
1 cup winter squash or sweet potato cooked & mashed
1/2 cup honey
1/4 cup molasses
1 stick butter softened
1 egg
1 3/4 cups flour (use half whole wheat)
1 teaspoon baking soda
1/4 teaspoon salt
1 cup walnuts broken pieces (or pecans)
Directions
1. Cream butter, honey, and molasses
2. Add egg and squash and blend well
3. Whisk together in a separate bowl, the flour, salt and soda and then add to above mixture, stirring well
4. Grease a muffin tin and fill each one with batter and then lay top with chunks of nuts and just lightly stir in with tip of knife
5. Bake in pre-heated 375 degree oven for 20 minutes or until cake tester comes out clean and dry
Garlic Bread
