Bake: 375 degrees Time: 10-15 minutes
Ingredients
3 cups flour
3 Tablespoons baking powder
3 Tablespoons sugar
1/2 Tablespoon kosher salt
6 ounces butter (COLD and cut into bits)
1 jalapeno pepper (seeded and diced)
2 scallions chopped
1 cup buttermilk
Directions
1. In Medium bowl, add first four ingredients and whisk together
2. Cut in the cold butter cubes till coarse crumbs
3. Add the chopped scallions and chopped jalepeno pepper
4. Stir in the buttermilk until it forms a ball, placing it on floured board
5. Mix with hands a little just to form ball, adding flour as needed
6. Roll out and cut into 15 circles, placing on baking sheet
7. Bake in a 375 degree preheated-oven for 10-15 minutes or until golden brown

Bake: 350 degrees Time: 30 minutes
Ingredients
1 cup canned pumpkin
1/2 cup pure maple syrup
4 eggs
1/2 teaspoon vanilla extract
1/3 cup coconut flour
1/4 teaspoon baking soda
1 1/2 teaspoon pumpkin pie spice
Directions
1. In a medium bowl, mix all wet ingredients, stirring until well blended with whisk
2. In small bowl, combine all dry ingredients with a whisk
3. Add the dry ingredients to the wet and stir together until well combined
4. Pour into a 8 ” or 9″ square pan, lightly sprayed with a non-stick oil
5. Bake in a pre-heated 350 degree oven for 30 minutes or until a knive inserted comes out clean
serves 12

Ingredients
1 pkg. (10 oz) spinach frozen, chopped
3/4 cup liquid egg substitute (full)
3/4 cup cheese, reduced-fat cheese shredded
1/4 cup red or green peppers diced
1/4 cup scallions diced (2-3) OR shallots
salt, pepper, cayenne to taste
Directions
1. Cook spinach and drain as much water from it as you can
2. In a medium size bowl, combine all ingredients and stir well
3. Spray 12 muffin tins with non-stick oil
4. Spoon into each cup
5. Bake in a 350 degree preheated-oven for 20 minutes or until knife comes out clean
Chicken ‘n Wild Rice Soup

Ingredients
3 Tablespoons butter
3 Tablespoons olive oil
1 small onion chopped
1/2 cup flour
9 cups chicken broth
12 oz. (weight after cooking) chicken, cooked & cubed
1 cup carrots, grated
8 oz. Wild Rice (prepared as directed on pkg.)
2 cups 2% milk
chopped fresh parsley to garnish soup in bowl
Directions
1. In a medium size stock-pot, saute onion in the oil/butter until tender
2. Stir in the flour thoroughly and then gradually add the chicken broth
3. Cook over medium heat, stirring constantly until mixture comes to a boil then boil for 1 minute
4. Stir in cooked rice, cooked chicken & grated carrots, simmering for 5 minutes
5. Stir in the milk and heat 1 minute
6. Spoon into soup bowls and top with fresh parsley if desired

Ingredients
1 pound lean Turkey ground
1 pound lean Beef ground
1 Tablespoon Sage freshly chopped
1 Tablespoon Rosemary freshly chopped
1 Tablespoon Thyme freshly chopped
2 full Tablespoons Pepperoncini’s chopped
3 full Tablespoons Roasted Red Pepper & Garlic salad chopped
( recipe found on my site)
1 Teaspoon salt
1/2 Teaspoon pepper ground
1 pound Spinach freshly cooked and drained season with onion & garlic powder (COOL)
Directions
1. In large bowl, combine all above ingredients except Spinach; mixing well
2. Place mixture onto wax paper and spread with hands to make a triangle at least 9 x 13 inches
3. Spread the cooled, cooked spinach on top of the meat and roll carefully from longest side
4. Lift onto a oil sprayed baking dish and bake in a pre-heated 375 degree oven for 55 minutes or until 165 internal temp.
5. Cool 5 minutes before slicing into 1 or 1/2 inch size pieces
6. Top each piece with chopped Roasted Red Pepper & Garlic Salad

Ingredients
1 5 oz. can Tuna fish in water
1 Tablespoon mayonaise
1 Tablespoon Buffalo wing Red Hot mayonaise
1 full Tablespoon diced red onion
1 full Tablespoon dill relish
salt to taste
cayenne pepper to taste
Directions
1. In a small bowl, add the drained Tuna fish and break up into chunks
2. Add remaining ingredients and stir together until tuna is lightly coated
3. Place a bed of your favorite salad greens in a dish and top with spoonfuls of the Spicy Tuna mixture

Ingredients
4 crowns fresh Broccoli cut into bitesize pieces
8 large cloves Garlic thinly sliced
1 1/2 lemons juiced (zest for more flavor)
1/2 cup extra virgin olive oil
salt/pepper to taste
Directions
1. Wash broccoli and dry with paper towel (do NOT cook)
2. Cut broccoli into bitesize pieces & place into large bowl
3. Thinly slice the raw garlic over broccoli pieces
4. Pour fresh lemon juice ( zest—optional) & olive oil over cut up broccoli and garlic
5. Add salt & pepper to taste and stir altogether
6. Cover bowl tightly and let the flavors marry in the refrigerator for several hours before serving

Bake: 400 degrees Time: 40 minutes
Ingredients
1 pound lean ground beef
1 pound lean ground turkey
8 ounce freshly cooked spinach
3 stalks finely diced and cooked celery
6 petite red, yellow, & orange peppers thinly sliced & sauted
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons freshly chopped sage
2 tablespoons freshly chopped rosemary
2 tablespoons freshly chopped thyme
Directions
1. In large bowl, combine all the above ingredients EXCEPT spinach
2. Mix together being sure to incorporate all ingredients and then divide into two
3. In a 9″ oil-sprayed pie dish, pat one half of the meat mixture covering the bottom of dish & up side a bit
4. Place the cooked Spinach on top of meat
5. On wax paper, press the other half of meat mixture to form a 9″ circle and lay it atop of the spinach layer
6. Tuck down the sides, pressing the two meat layers together with fingers
7. Drizzle a couple teaspoons olive oil on top
8. Bake in a pre-heated 400 degree oven for 40 minutes or until temperature is 165 degrees

19 ounces Ground White Turkey (97% lean)
1 full tablespoon freshly chopped Sage
1 full tablespoon freshly chopped Rosemary
1 full tablespoon freshly chopped Thyme
6-8 Sundried Tomatoes chopped
1/4 teaspoon poultry seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon potato starch
Directions
1. Put ground turkey in a medium size bowl
2. Add all the ingredients and mix well with hand
3. Place in a sprayed bread pan, shaping into an oblong loaf
4. Bake in a pre-heated 375 degree oven for 50-55 minutes or until internal temp. is 165 degrees

Ingredients
3/4 pounds Fresh Cod
1 small tomato thinly sliced
1 lemon thinly sliced
1 teaspoon dill weed
Garlic/Onion powder sprinkled heavily
salt/pepper to taste
vegetable spray
Directions
1. Dry fish thoroughly with paper towel
2. Cut foil largely to wrap entire piece of fish & spray foil with vegetable spray
3. Spray top and bottom of fish, then place in center of foil
4. Cover top of fish with the dill, garlic, onion powder, salt & pepper
5. Place thinly sliced tomatoes on top, covering all of fish, add sprinkle of salt
6. Place lemon slices on top of tomatoes, covering all
7. Wrap tightly in foil and place on cookie sheet
8. Bake in pre-heated 400 degree oven for 20 minutes or until internal temp. of fish is 145 degrees
