TOTALLY GLUTEN FREE

Bake:    350 degrees       Time:    20 minutes

Ingredients

1 pkg. (10 oz) spinach frozen, chopped
3/4 cup liquid egg substitute (full)
3/4 cup cheese, reduced-fat cheese shredded
1/4 cup red or green peppers diced
1/4 cup scallions diced (2-3) OR shallots
salt, pepper, cayenne to taste

Directions

1.  Cook spinach and drain as much water from it as you can
2.  In a medium size bowl, combine all ingredients and stir well
3.  Spray 12 muffin tins with non-stick oil
4.  Spoon into each cup
5.  Bake in a 350 degree preheated-oven for 20 minutes or until knife comes out clean

Bake:  300 degrees   Time:  60 minutes

Ingredients

4 cups oatmeal (not quick oats)
1 cup coconut unsweetened
1 cup nuts (optional)
1 cup wheat bran
1 cup raisins (or any dried fruit)
1/2 cup flax meal

Syrup

1 stick butter
1/4 cup oil
1 tablespoon vanilla
1 tablespoon cinnamon
3/4 cup honey (raw is best) * go to my Food Facts page for information
1/4 cup blackstrap molasses unsulphured

Directions

1.  Place ALL dry ingredients (first 6 ingredients)  into a large enamel roasting pan and mix with hands
2.  In saucepan, add the next 6 ingredients and melt together until all ingredients are incorporated to make syrup
3.  Stir syrup into all of dry ingredients until all is lightly coated or wet
4.  Place in 300 degree pre-heated oven for 30 minutes
5.  Remove from oven and stir together, then place in oven for 30 minutes longer
6.  Cool on rack, stirring a couple times in the first 10-15 minutes
7.  Store in an air tight container or a gallon glass jar when totally cooled

*  After dipping french toast into egg mixture, dip into this granola before frying your ‘french toast’
*  Use it on yogurt or layer it into parfait glasses with home-made applesauce for an extra treat
*  Put it on top of an Apple Crisp before baking

Ingredients

1 stick butter
1/4 cup oil
1 tablespoon vanilla
1 tablespoon cinnamon
3/4 cup honey
1/4 cup molasses

Directions

1.  Put all ingredients into saucepan on medium heat and stir
2.  Be sure to stir until all ingredients are incorporated—it will come together and look like syrup

Gourmet French Toast transformed overnight!  Use the best Italian Bread you can find and be sure to buy it the day before or freeze it.  A delicious and quick addition to your breakfast brunch for the Holidays.

Bake:  350 degrees   Time:  35-40 minutes

Ingredients

1 loaf of Italian Bread (enough for 13, thick slices)
6 eggs
1 cup heavy cream
1/4 cup honey
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg (optional)
3 tablespoons butter melted
maple syrup

Directions

1. Lightly spray a large cookie sheet
2. Slice the bread into 1″ thick pieces, about 13 slices
3. In a large bowl, mix with mixer, the eggs, heavy cream, honey, cinnamon and nutmeg
4. Place the bread slices onto the sheet pan and pour the egg mixture on top of bread, being
sure to cover them well (there will be some egg liquid in pan as well)
5. Cover pan with foil and place in refrigerator overnight
6. Remove foil and bake in pre-heated 350 for 15 minutes
7. Brush each piece with melted butter and continue to bake 20-25 minutes or until golden brown
8. Serve immediately with maple syrup
9. Left overs freeze very well and can re-heat in toaster

You decide what shape to cut out of a wholesome piece of bread next time your Saturday morning rolls along.  All that is left to do is drop your egg into a buttered fried crust and bring a smile to any child.

Ingredients

1 slice Whole Wheat Bread
1 egg
butter for spreading

Directions

1. Pre-heat skillet on medium heat
2. Cut out a large hole in center of bread, using a cookie cutter or the mouth of a large glass
3. Butter both sides of the cut-out and butter both sides of the frame
4. First brown the cut-out in the buttered skillet on both sides till nicely browned and crisp
5. Place frame in pan and brown on the one side, adding more butter if needed
6. Turn frame over and drop a small amount of butter into hole and then drop the egg into the
hole, cooking till almost done and then flip over gently for a few more seconds
