Spinach Cups

TOTALLY GLUTEN FREE
Bake: 350 degrees Time: 20 minutes
Ingredients
1 pkg. (10 oz) spinach frozen, chopped
3/4 cup liquid egg substitute (full)
3/4 cup cheese, reduced-fat cheese shredded
1/4 cup red or green peppers diced
1/4 cup scallions diced (2-3) OR shallots
salt, pepper, cayenne to taste
Directions
1. Cook spinach and drain as much water from it as you can
2. In a medium size bowl, combine all ingredients and stir well
3. Spray 12 muffin tins with non-stick oil
4. Spoon into each cup
5. Bake in a 350 degree preheated-oven for 20 minutes or until knife comes out clean
Poco Peppers

These ‘tangey’ little Poco Pepper pinwheels are so easy to make and are the perfect ‘finger food’ for your next party or celebration

Bake: 400 degrees Time: 12-15 minutes
Ingredients
3 ounce cream cheese, softened
1/2 cup cheddar cheese shredded
2 Tablespoons pepperoncini’s chopped
2 tablespoons black olives chopped
1 Tablespoon pepperoncini juice
2-3 drops Tobasco sauce or any other favorite (optional)
1 (8 oz.) Crescent Rolls
Directions
1. In small bowl, combine all ingredients (except rolls) and blend well
2. Separate Crescent dough into 4 rectangles, pressing perforations to seal
3. Spread 1/4 of cheese mixture over each rectangle
4. Start to roll at long side and pinch seam together
5. Cut side down, slice into 10 slices
6. Place onto oil-sprayed cookie sheet
7. Bake in pre-heated 400 degree oven for 12-15 minutes or until golden
Barbeque Chicken Wings
If you like caramelized chicken wings with meat that falls off the bone at every bite, you can have them on the table in less than one hour

Bake: 375 degrees; 400 degrees Time: 30 minutes; 10 minutes
Ingredients
1 large package jumbo chicken wings (about 2 dozen)
1/3 jar of your favorite barbeque sauce
Directions
1. If wings aren’t cut up, be sure to cut into two pieces, throwing away the tip
2. In a pre-heated skillet or an electric skillet on high temperature, brown each wing on both sides, without burning them
3. Place them in a rectangular metal pan sprayed with oil OR just oil bottom and sides with fingers
4. Drizzle about 1/3 jar barbeque sauce over tops of wings, don’t worry about covering them completely—do NOT stir yet
5. Bake in pre-heated 375 degree oven for 30 minutes
6. Remove from oven and stir until wings are all coated with the barbeque sauce from the pan
7. Return to oven at 400 degrees and bake 10 minutes
8. Take out of pan immediately and serve on large platter
